In Austria it’s not uncommon for people to make a syrup from elderberry flowers. It’s wonderful with sparkling water to make a spritzer and definitely much healthier than sodas. The syrup has a very delicate flavor that’s amazingly refreshing on a hot summer day.
I don’t know why but elderberries don’t seem to be very popular here in the States. Luckily for me my Czech mother-in-law has a few trees growing in her backyard and every year around this time she harvests the flowers
My mother-in-law is away on vacation right now so I’ve been collecting the blossoms and storing them in the freezer until her return. When she comes back I’ll have her show me how to make the syrup so that I can share the recipe with you. You can also fry the batter-dipped flowers and serve them sprinkled with lemon juice and powdered sugar. Yum!
